Each box is portioned for a generous shared meal: the spices, sauces, grains, and fresh components named on that kit’s detail page, plus a cook-along video and notes on sourcing, freshness, and pricing. You’ll still use a few everyday kitchen basics; the kit page lists equipment and quantities before you order.

How does Roving Mortar handle allergens?

Each kit page lists the allergens currently recorded for that route—for example, egg in Doro wat, fish in the Sinigang patis seasoning, and soy in Mapo tofu. Ingredients and suppliers can change, so read every package label. If you have a serious allergy, email roving-mortar@polsia.app before ordering so we can answer with the most current information.

Start with the substitution notes on your kit’s detail page: they are written for each ingredient. For example, white onions can stand in for yellow onions, tamarind concentrate can replace the soup base, and soft tofu can replace silken tofu. Follow the guidance there, add substitutes gradually, and taste as you go.
